From the Kitchen: Keto Breakfast Wraps

Those on Keto know full well the price to pay for staying the line of health and satisfaction of the palate. I’ve gone lengths to find acceptable options to satisfy even the most stringent of diet plans, that won’t break the bank(nor your carb count!) With that, here’s a little recipe y’all following the Keto diet plan might enjoy.

Andrea’s Keto Breakfast Wraps

The recipe here is quick and simple, and can be easily altered for various dietary needs. The version shown in the photo above utilizes the following:

Ingredients

  • Organic Ground Turkey Sausage
  • Organic Free Range Eggs(2 per large wrap, 1 per small)
  • Organic Greens(Spinach, Chard, Kale)
  • 1/8-1/4 of a medium avocado
  • Organic Ground Flaxseed
  • Ole Extreme Wellness Keto Friendly Carb Tortillas(large) or  Mission Zero Net Carb mini Tortillas.
  • Organic Extra Virgin Olive Oil
  • Seasonings used: Onion Powder, Ground Peppercorns, Turmeric, Paprika, Garlic Powder or Salt

This is one of the easiest healthy meals to prepare that can go with you as you go about your day, and is even easier to keep as it repeats easily and several can be made and stored for later for those of us who may not necessarily have the time to cook at every meal.

Prep time: ~30 min

To start, take thawed ground turkey and cook in a  preheated greased large skillet, ensuring the meat is thoroughly cooked to a golden brown(approximately 160°F/72°C). Remove from heat, cover.

To prepare the eggs: As the meat finishes cooking, preheat a separate small skillet/frying pan on the stove top. Next, beat the eggs in a small mixing bowl, and add the dry seasonings. Mix well. Then grease with about 2 tbsp oil, making sure to cover the cooking surface, and add the eggs, followed by the greens and now cooked turkey. Cover. (Optionally you can add ground cheddar  cheese to the top of the meal before covering)

As the eggs solidify and greens wilt, prepare to move the operation to a plate with a strip of aluminum foil, and the tortilla wrap. Once the eggs are done, the entire meals can be lifted or slid out of the skillet/pan and directly onto the tortilla. From there, add the avocado and ground flax, simply wrap up in the foil like a burrito, and you’re done!

Repeat as needed for however many wraps you’re making.
